I have taken the recipe from here and adapted it slightly.
2 cups flour (I used self-raising)
2 cups sugar (I use 1 to 1 1/2 cup depending on my mood)
3/4 cup cocoa
2 tsp baking soda
2 large eggs (or 3 medium)
1 tsp salt
1 cup buttermilk (I use 2 tsp lemon juice in 1 cup milk, set aside 5-10 mins to thicken)
1 cup vegetable oil (3/4 cup works too)
1 1/2 tsp vanilla extract
1 cup boiling water (add 2-3tsp coffee granules for a richer chocolate cake flavour)

Preheat oven to 175 C. Lightly grease and flour a 9 x 13 inch tin or 4 x 20 cm sandwich tins. Place all ingredients in a mixing bowl except water/coffee. Mix at medium or medium high speed until all ingredients are blended and mixture is smooth. Add water/coffee. Batter will be thin. Pour into baking tin and bake. 1 hour in large tin, 20-25 mins for sandwich tins and 20 mins for cupcakes. Allow to cool completely.
